Natriumstearoyl-2-lactylaat heeft verschillende toepassingen in wetenschappelijk onderzoek. Het is gebruikt als stabilisator bij emulsiepolymerisatie, als oppervlakteactieve stof bij de bereiding van colloïdale dispersies en als emulgator bij de bereiding van liposomen en micro-emulsies. Natriumstearoyl-2-lactylaat is ook gebruikt bij de bereiding van nanodeeltjes en nanocapsules. Daarnaast is natriumstearoyl-2-lactylaat gebruikt om biologisch afbreekbare polymeren, biocompatibele hydrogels en antischimmelfilms te maken.
